Here is a list with short descriptions of typical Okinawan dishes you might see in shokudo or izakaya. It is not a complete list, but some of the more common dishes. Many of these are not easily found in mainland Japan.

 

ラフテー rafute: chunks of pork stewed in awamori, soy sauce, and miso

ソーキ soki: pork stewed with bone, often seen as soki soba ソーキそば

中味汁 nakami-jiru: pork intestines soup

中味イリチー nakami irichi: pork intestines and miso stir-fry

ミミガー mimigaa: pig’s ear in vinegar

てびち tebichi: stewed pig’s feet

山羊, or ヤギ yagi: goat (called hiijaa ヒージャー in Okinawan)

ヒージャー刺し身 hiijaa sashimi: raw goat meat

ヒージャー汁 hiijaa-jiru: goat meat in soup

ちゃんぷる, or チャンプル chanpuru: stir-fry with eggs, leeks, and/or tofu

ジューシー juushii: rice porridge

沖縄そば Okinawa soba, or すば suba: wheat noodles in soup with meat and vegetables

ゆし豆腐そば yushi-doufu soba: Okinawa soba, with chunks of island tofu

ヒラヤーチー hira yaachii: Okinawan-style okonomiyaki

沖縄焼きそば Okinawa yakisoba: thick noodles fried with vegetables

アーサ汁 aasa-jiru: seaweed soup

島らっきょう shima rakkyou: pickled shallots

もずく酢 mozuku su: Okinawan-style vinegared seaweed

人参しりしり ninjin shiri shiri: shredded carrot stir-fried with egg and tuna, seasoned with only salt and pepper.

ジーマーミー豆腐 jiimaamii doufu: island peanut “tofu”

豆腐よう toufuyou: highly concentrated dried tofu fermented in awamori

海ぶどうumi budou: “sea grapes”; a variety of kelp that resembles grapes

島豆腐 shimadoufu: Okinawan-style tofu

タコライス tako raisu: taco-flavored ground beef on rice

サーターアンダギー saataa andagii: Okinawan doughnuts

オリオン Orion: beer made in Okinawa

泡盛 awamori: an Okinawan liquor distilled from Thai rice, different from mainland “sake”
